Baked grey dorade fillets on summer vegetables

APPOLIA ambiance 3 - Peugeot Saveurs


  • 4 grey dorade fillets
  • 2 zucchini
  • 2 tomatoes
  • 1 eggplant
  • 2 yellow onions
  • Olive oil
  • White balsamic vinegar
  • Sikara pepper
  • Flax seeds



  • Peel the onions and chop finely
  • Spread the onions at the bottom of the dish and drizzle with olive oil
  • Season with salt
  • Slice eggplant, zucchini and tomatoes finely

Mise en place

  • Evenly arrange the sliced vegetables on top of the onion
  • Season with olive oil and salt


  • Bake for 35 minutes at 170°C = 338°F

Seasoning the fillets

  • Season the fillets with salt and ground flax seeds
  • Remove the vegetables from the oven
  • Season the vegetables with Sikara pepper and olive oil
  • Lay the grey dorade fillets skin-side up
  • Again, drizzle with olive oil
  • Return to oven for 15 more minutes
