Easy Crisp French Pepper Wafers

For about twenty wafers (depending on the size):
Preparation time: 5 minutes
Cooking time: 7 to 10 minutes


  • 2 egg whites
  • 60g of wheat flour of your choice
  • 50g melted coconut oil (or butter)
  • pepper (fair trade, timut …)
  • salt (optional)


  • In a bowl, combine the egg whites with the flour and melted oil until a smooth paste is obtained.
  • Add the equivalent of a tablespoon of ground pepper and mix again.
  • Line the baking sheet with baking paper or a baking mat designed for this purpose. Form the wafers by spreading out small amounts of dough as finely as possible using a teaspoon.
  • Place everything in the refrigerator for about ten minutes. During this time, preheat the oven to 200 °.
  • Once the oven is hot, remove the wafers from the refrigerator. Sprinkle with salt if desired and make a final turn of a pepper mill. Bake for 7 to 10 minutes, watching the cooking.
  • The wafers are ready when they start to have a nice golden color. At the end of cooking, let it cool before eating.
